Despite appearances, this is not a belated Halloween post. Well, okay, so it kind of is. But as soon as I tasted these homemade thin mints, which I made to go with my girl scout Halloween costume, I knew that they would make a perfect holiday cookie.
Not only do the chocolate and mint flavors of these cookies make them appropriately seasonal, but they are even better when frozen. Which means that you can whip up a batch before the holiday craziness sets in and have them on hand to pull out for unexpected visitors or sparse Christmas cookie trays.
Or you could eat approximately twenty-seven of them straight from the freezer the morning after Halloween. You know, hypothetically speaking. Girl scout sash optional.
