Lets get one thing straight. I am not, nor will I ever be, a morning person. Sure I love brunch, and the Sunday paper, and other supposedly morning activities that everyone knows don't actually start before noon. But you're never going to find me bounding out bed before my alarm goes off (or when my alarm goes off for that matter...despite putting the clock all the way across the room I still always hit snooze at least once or twice). Which doesn't leave me much time for breakfast.
In fact, I'm always surprised when I hear of people who make themselves breakfast at home every morning. Sure, sitting on my couch with a bowl of oatmeal and a cup of coffee on a weekday sounds idyllic; unfortunately, I'm much more likely to be chugging green juice on the subway or speed eating yogurt and granola at my desk. Hardly the breakfast of champions. But that's all about to change. Now that it's fall and my morning commute is getting a little chillier, I find that I'm craving something a little heartier and more comforting in the morning.
These pumpkin muffins fit the bill: they're sweet, spicy and even good for you. But best of all, they don't cut into any of my precious sleeping time. I whip up a batch on the weekend, and grab one everyday on my way out the door. Comforting and seasonal, they would pair perfectly with a pumpkin spice latte...if only I had time to stop for one. Oh well, there's always tomorrow.
