cocoa roasted nuts

If you're in desperate need of a last minute Christmas gift, a crowd pleasing party snack, or just something to get you through the mania that is the holidays, look no further than these cocoa roasted nuts.

Today, they served all three purposes for me. I gifted them to my parents when they picked me up at the Miami airport, they were the perfect snack to enjoy as we kicked off our holiday vacation, and they got us through the two hour drive from Miami to the Keys. On the day before Christmas Eve. Enough said.

So what are you waiting for? You can whip up a batch of these sweet, salty and chocolaty nuts in under an hour. Your friends, guests and stomach will thank you.

Cocoa Roasted Nuts
Recipe from Joy the Baker, who adapted it from The Essence of Chocolate

1 cup hazelnuts, 1 cup almonds, 1 cup pecans
1 stick unsalted butter, cut into pieces
2 egg whites
1 cup granulated sugar
1 tablespoon cocoa powder
salt to taste

Preheat the oven to 325. On a rimmed baking sheet, roast the nuts until fragrant, about 10 minutes. Remove from the oven, and rub hazelnuts in a dish towel to loosen and remove skins (don't worry if you don't get them all--I left some on and it was fine). Melt the butter in a heavy saucepan over medium heat, and pour over the nuts, tossing to coat. Meanwhile, process egg whites in the bowl of an electric mixer using the whisk attachment until just starting to hold their shape. Add sugar, and whisk on high for two minutes, until sticky and shiny. Sift cocoa over the egg and sugar, and fold in. Pour the cocoa mixture over the nuts and stir. Bake for 30 minutes, removing the nuts every 10 minutes to stir them. Before returning the nuts to the oven for the final 10 minutes, toss with salt. Cool and serve. Nuts will keep for up to a week in an airtight container.

Um, since the one I snacked on at your house I haven't been able to stop thinking about these. Totally making them for the holiday party tomorrow! (In addition to the david lebovitz snack mix because who doesn't love gobs of sweet and salty nuts?)
