Now before you go thinking that I didn't like the cake, let me explain. It wasn't that this cake wasn't good. It was that it was too good. You see, I was the only one home this weekend, and I found myself opening the refrigerator two...three...okay fine ten times a day and cutting myself a tiny slice. So imagine my shock and horror when I opened the refrigerator this morning and noticed that more than half of the cake was gone. In two days. Now, in my defense, I gave away a few (okay two) slices, but I can recognize a budding addiction when I see one. And I knew what I had to do. So into the trash went the soft layers of chocolate cake studded with chocolate chunks, the meringue frosting, lightly sweetened and tinged with vanilla, and the crumbly chocolate topping.
It was either that or check myself into the Betty Crocker Clinic.

lol yeah, betty crocker clinic. i made a half recipe and ate half of it in one day all by myself. it was too good.

I had made this before, so I only made a quarter recipe this time. I would definitely be joining you at the Betty Crocker Clinic if there was a whole one around.

Yeah, I couldn't keep my fork off of it either. It was that good.
I don't blame you for throwing it away. Part of mine went in there, to, and for the very same reason. All of these recipes are delicious, but I may well buy a treadmill and keep it in the kitchen just to burn off the calories I'm consuming...
Trashing the leftovers is a tough thing to do (especially as your cake looks fantastic), but then again, I think your hips are thanking you! ;)
