whole wheat apple walnut muffins

My New Year's Resolutions are on track. Going to the gym: check. Taking my vitamins: check. Eating a healthy breakfast: check. Impressive, right? There's only one thing--staying on track is awfully, well...boring. Don't get me wrong--I like a nice hot bowl of oatmeal as much as the next girl, but after eating it every morning for a week, I was ready to break my resolutions faster than you can say everything bagel (with scallion cream cheese...you know, just hypothetically speaking).


Clearly, I needed something to break up the monotony. Something that wouldn't throw my resolutions off track, but still tasted like cheating. These apple walnut muffins are light, sweet and satisfying, but packed with whole wheat flour, ground flax seeds, yogurt, applesauce and yes, even oats. Just don't tell my taste buds.

Whole Wheat Apple Walnut Muffins
Inspired by Joy the Baker and Smitten Kitchen
Makes 16 muffins

1 cup whole wheat flour
1/2 cup ground flax seeds
1/2 cup oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup dark brown sugar
3/4 cup unsweetened applesauce
3/4 cup greek yogurt
1 egg, lightly beaten
2 tablespoons canola oil
2 apples, diced
1/2 cup walnuts, lightly toasted and coarsely chopped

Preheat oven to 375. Combine dry ingredients and set aside. In another bowl, stir together wet ingredients. Add wet ingredients to dry and mix just until incorporated. Stir in apples and walnuts. Spoon into lined muffin tins and bake at 375 for about 20 minutes, or until a knife inserted in the middle of a muffin comes out clean.

For those of you keeping track, the approximate nutrition info is as follows: 155 calories, 6 g fat (less than 1 g saturated), 15 mg cholesterol, 82 mg sodium, 20.5 g carbohydrates, 3 g fiber, 9 g sugar, 4 g protein.

OK, these are being added to bookmarks. I'll be making more muffins in 2009, and am always looking for yummy new recipes.

yum! when i saw these on the serious eats i knew i had to make them. i made these yesterday. they turned out nicely-a little mushy in the middle (maybe because i used fat free yogurt? who knows)-but this morning i microwaved one and put some honey on it and the insides had tightened up and they were delish! (ok full disclosure i also put a little reduced fat cream cheese on it too.. yum!)
