{twd} peppermint chocolate sandwich cookies

The very worst thing about being in law school is that finals always fall right in the middle of the holiday baking season. This means that just when I want to be spending all of my time in the kitchen with gingerbread and royal icing and peppermint, I'm forced to actually spend most of it in the library with law books and treaties and a pocket Constitution (I only wish that were a joke). So far though, I've been good. When I stopped in the grocery store last week, I totally ignored the display of holiday candies begging me to bake them into something scrumptious. And last weekend as I headed into the library, I didn't even stop to greet the Christmas cookies that were calling out to me from the covers of the cooking magazines at my local newsstand. See? I have serious willpower.

But when I realized that this week's Tuesdays with Dorie recipe, Grandma's All Occasion Sugar Cookies, could be used to construct one of the recipes from the Food Network's 12 Days of Cookies Special, it was too much for me to take. My iron will crumbled, and I decided that it was a sign from the universe that I should put down the highlighter and break out the KitchenAid. And I am so glad I did. I made the sugar cookie dough last night after returning from my last class of the semester, rolled it into logs, and popped it into the refrigerator. Today I sliced and baked my cookies, and then, inspired by Giada's Peppermint Chocolate Sandwich Cookies, I spread peppermint laced chocolate between them, and topped each cookie with more chocolate and some crushed candy cane pieces.

You may also have noticed that Sweet Tarte has gotten a makeover! The new design comes from Hannah of Craner Design Studio. After seeing Hannah's work on The Engineer Baker and My Baking Addiction I had major blog envy, and asked her to whip up a new layout for me, as well. I couldn't be more pleased with the results! It is fun and vibrant, but still simple, which is exactly what I wanted. I hope you enjoy it!

Beautiful design! I love it, and I love your take on the TWD recipe. Mint and chocolate - while I'm not a fan, I might have to give it a try, because it's my boyfriend's favorite flavor combo.

Such a cute post. I'm glad you carved out time from your exams for a bit of holiday baking. I think when we were in law school our exams were after Christmas. Which was a very mixed blessing. Love the look of your cookies.
